Chong Qing Grilled Fish Introduces Sichuan Grilled Fish Cuisine To KL-ites Iconic grilled fish dish has a recipe dating back 1,700 years ago
Chong Qing Grilled Fish officially launched its first outlet in the heart of Kuala Lumpur at the Boulevard at Signature2, Sunway Velocity, following the roaring success of its maiden Malaysian outlet in Kuching, Sarawak. Upon a trip to Chongqing, China, the founders wanted to replicate the dish in Southeast Asia, successfully launching its first outlet along Mosque Street in Singapore and later bringing the well-loved brand to Malaysian shores.
This ancient fiery Sichuan dish will definitely satisfy your craving for the extreme hot and spicy taste bud. Sichuan has long been known for its hot and spicy cuisine and chefs who enjoy experimenting with new styles, rather than sticking to set recipes and methods of cooking. It is this explorative mindset that earned Sichuan its legendary grilled fish and hotpot medley known as Chong Qing Grilled Fish.
Seabass Grilled Fish, RM68 (Small) RM78 (Large)
We opt for Seabass Grilled Fish with Spicy Fragrant signature broth wild the mild spiciness. This punchy broth is made from dried chillies, peppercorns, chilli powder and a secret spicy sauce. The fish tasted amazing, it was marinated with over 20 herbs and spices, then grilled under hot charcoal and serve in a hotpot full of Sichuan spice. Fish has a slightly charred fish skin, sweet, crispy and the flesh is pillow-soft. A mouth watering dish.
Mouth watering chicken, RM18
Tender and juicy kampung chicken topped with Spicy Sauce, chopped garlic, spring onion, white sesame and serve with cucumber.
Hand Shredded Cabbage, RM18
I really like this dish cause cabbage is my favourite vegetable. Chinese cabbage stir-fried with pork slices, dried chillies and garlic. Chef here did every dishes well... savoury wok taste.
Fried Rice with Shredded Egg, RM14
Full of savoury wok taste, simple fragrant fried rice with egg and spring onion. We clean up every dish here, so yummy.
CEO of Chong Qing Grilled Fish, Khoo Siow Kiat shared, “It was this very dish that left a lasting impact on us and we knew that it was a concept that should be introduced outside of Chongqing, China. We too experimented with the classic grilled fish and Chong Qing Grilled Fish is the result of our own take on Sichuan cuisine.”Chong Qing Grilled Fish is known for its Signature Grilled Fish which borrows its recipe from the classic Chongqing grilled fish, commonly prepared in a simmering hotpot. The chefs in this region of China seldom cooked according to recipes, preferring to experiment with new styles of cooking and as a result of this, the dish has many different variations and is highly versatile.
Available at Chong Qing Grilled Fish is its Signature Grilled Fish which is highly customisable and can be prepared in a choice of 8 different flavours and is further marinated with over 20 types of herbs and spices. The 8 different flavours to choose from are Spicy Fragrant, Spicy Numbing, Pickled Cabbage, Hot and Sour, Mushroom Herbs, Fermented Black Bean, Fresh Chillies and Chopped Chilli Pepper.
What makes the restaurant’s Signature Grilled Fish so special is the fact that it has a crispy skin exterior coupled with pillowy-soft flesh beneath and is served in a sea of broth. Journalists were educated on the simple 4-step process to order the Signature Grilled Fish and this includes selecting a type of fish, choosing a broth flavour, opting for a level of spiciness and adding a choice of sides.
Chong Qing Grilled Fish highly recommends its “Spicy Fragrant” (一品香辣) or “Spicy Numbing” (川味麻辣) broths which are bound to get all the senses awakened. It is ideal when paired with the chef’s recommendation of “Temerloh Patin”, for its rich, fatty yet tender texture. It also has a delicate sweetness to it which will never go wrong with any broth. The Signature Grilled Fish is priced from RM58. Additionally, other key dishes at Chong Qing Grilled Fish includes the Offal Slices (RM22), Spicy Chicken Cubes (RM30), Double-Cooked Spicy Pork Slices (RM28) and Hand Shredded Cabbage (RM18).
“What makes our Signature Grilled Fish unique is the degree of customisation that diners can make to their dish: want it spicy, extra spicy or mild? You’ve got it. But what remains the same is the crisp top layer of fish skin and the tender white meat beneath,” added Khoo.
