Signature dish: Buddha Jumps over the wall
"Buddha Jumps Over The Wall" one of the most popular dishes of Fujian cuisine, a soup made from many ingredients such as sea cucumber, abalone, scallops, fish maw, mushroom, chicken and Shaoxing wine and requiring one to two full days to prepare. Since its creation during the Qing Dynasty (1644 - 1912), the dish has been regarded as a Chinese delicacy known for its rich taste, usage of various high quality ingredients and special manner of cooking. The dish's name is an allusion to the dish's ability to entice the vegetarian monks from their temples to partake in the meat-based dish. Buddha jumps over the wall recipe is high in protein and calcium. And it is perhaps the ultimate feast. It requires an enormous amount of effort, is best made over a period of two days, and can contain as many as thirty different ingredients.
