Cafés Richard, A Parisian Dream @ Resorts World Genting

Everydayfoodilove.co was given the opportunity to travel to Genting Highlands recently to visit and see first hand SkyAvenue, the latest attraction to join the ranks of Resorts World Genting in the popular highland resort. And yet, there must be hundreds of Cafés out there, so what makes this one different from the others? I will tell you. It is a Parisian Dream come true.

Cafés Richard

I love the way Cafés Richard designed their first Malaysian outlet. Nearly everything is fundamentally french, even the place looks like it was freshly transplanted here from Saint Germain. The well-dressed staff greet patrons in French. They have a pâtisserie and their coffee-machines look like it was just refurbished from the Renaissance Age (by the way, Cafés Richard has been around 1892). They even have those little small tables and chairs lining the sides, reminiscent of a French sidewalk café. But of course the most-eye catching dining area has got to be the alfresco area right in the middle of SkyAvenue, a little flower-shaped island in the middle of a bustling mall.
DID YOU KNOW? Cafés Richard was founded in 1955 by Pierre and André Richard, and it has been run by the family ever since. With an expertise going back decades, they have adapted well with the times and patrons will be pleased to know that they are also very much into corporate responsibility and long-term sustainability. If you were to visit their home page (http://www.cafesrichard.com/cafes-richard-ethical-approach-321.html), you would undoubtedly be impressed by their committement to supporting local communities where they get their coffee beans, their recognition and support for a greener environment and their concern for managing carbon footprints. They even have an approved training center where they train future baristas in the Art of Coffee.

Cafés Richard distinguishes itself from other french cafés by their coffee bean selections from South America, Mexico, Indonesia, Ethiopa, Costa Rica and Jamaica which are then blended for consistent quality. The secret for the aroma and taste of their coffee lies in their incomparable roasting process and the method of their brewing.
Of course, by default the first method that they have for brewing is a classic, the French Press. The next method is via a Chemex. Of great interest to me however, was the Syphon and Cold Drip.

In practice, the Siphon uses heat to create vapor pressure to brew the coffee. This pressure is created when the coffee is being transformed into steam which forces it up the siphon. Later, condensation occurs when the coffee gets colder (after they put out the fire) and it flows back down into a beaker. As for the Cold Drip method, coffees made using this method are better served cold, whereby the brewing process requires the coffee to be extracted using a cold water extraction, a process which takes hours!
As for foods, Cafés Richard have an excellent menu straight from the streets of Paris! A quick glance at their extensive menu reveals that they offer Viennoiseries (Freshly Baked French Pastries) such as the classic Croissant, Pain Aux Raisins (Raisin Danish) and Pain Au Chocolat (Chocolate Danish). You may also opt to have these as part of a breakfast set which may include artisan jams and butter, freshly squeezed orange juice, toasted french baguettes or a French-styled Omelette with Gruyére Cheese and mushrooms. This will depend on your selection of course, with a choices of coffees and teas to accompany your meal. Please take note that breakfast sets are available until 11am only and are going for RM20 - RM22.

Aside from Petit Déjeuner, Cafés Richard also offers Toute La Journée or All Day Dining. Their Appetizers includes Mini Pancakes with Smoked Salmons, Baguettes with Slow-cooked Beef, Turkey Ham sandwiches and an interesting Oven Baked Cauliflower garnished with parmesan cheese and drizzled butter. They also have Salads, Soups and Side Dishes that would do a Gascon proud. They also have Fromage (cheeses) and Desserts, but for Main Courses or Plats Principaux, you have choices ranging from Norwegian Salmon, Char-broiled Chicken, Spaghetti with Escargot and Cream sauce, Roasted French Duck and Grilled Australian Beef. Prices varies depending on your selection.
But the highlight for me, is undoubtedly the Entremets or Parisian High Tea! They have Sweets and Savories, which was presented in a wonderful bag-sized cabinet filled with delights!
For Savories, they have Blini with Smoked Salmon and Chive Dressing; Smoked Duck with Melon; Salted Beef on French Toast; Foie Gras Mousse on Vol-Au-Vent and Cranberry Dressing; Wild Mushroom Quiche and Crab Meat Avocado Mascarpone in Cone.

For Sweets, they have Mini Éclairs, Profiteroles, Assorted Macaroons, Cheese Cake, Fruit Tarts, Pistachio Financiers and Crème Brûlée.
The Parisian High Tea is going for RM128 or RM143 for two (2) persons and includes a choice of tea or coffee. Alternatively, you may want to celebrate an anniversary or an auspicious occasion. They also offer a glass of Drappier Carte d’Or Brut NV Champagne for RM38 per person.

If you are dazzled by the dizzying array of coffee and teas to choose from their menu, you will be happy to know that Cafés Richard also offers a Liquors, Liqueurs, Champagne, Wines, Beers and Soft Drinks. But do not just let me tell you all about it, why not go and try it for yourself? And as the french say, Merci Beaucoup for reading, À BIENTÔT! ~ Marv.7
