An Evening with a Michelin Star Chef Nicolas Isnard at Mandarin Oriental Kuala Lumpur
The Mandarin Grill at the Mandarin Oriental Kuala Lumpur has long had a reputation of par excellence. Set in the heart of Kuala Lumpur, with a great view of the evergreen KLCC park, well-dressed diners are seated amidst richly elegant furnishings and attended to devotedly by a host of rapt waiters. Coupled with a great menu featuring culinary delights made from the best cut meats and premium produce the country has to offer, it is no wonder that the Mandarin Grill has become the byword for fine dining in Kuala Lumpur.

For the past week, patrons of the restaurant have been delighted by the culinary creations of Chef Nicolas Isnard, a renowned one-Michelin-star chef, who brings his unique approach of traditional Burgundian dishes to the Mandarin Grill. The Master Chef of France presented to us some of his favourite signature dishes, each accompanied with a vintage that enhanced the dining experience. His gastronomies were subtle and inspiring, and truly expounds his philosophy; “epicurean approach, respect for the product and a fresh cooking.”
We were first regaled with champagne, accompanied with bread and butter.
Betteraves / Comte / Truffe
Beetroot, Comte Cheese, Truffle. It was a fun appetiser that left you wanting for seconds!Tartare De Crevette Facon Thai, Guacamole and SA Mousse De Citron Noir
Thai Style Prawn Tartare, Avocado Guacamole, Black Lemon Froth. It was accompanied with Moët and Chandon Rosé NV, a pink champagne. This dish was very refreshing.
Red Snapper Ceviche
Red Snapper, Coriander, cucumber and almonds. It was accompanied with Domaine Vacheron Sancerre, a most highly sought-after white wine from the Upper Loire. This dish quickly became my favourite as the texture of the dish was interesting, from the soft mushy fish mixed with the chewy cucumber and almonds. The apple sauce lent it a delightful sweet sour after-taste.
Noix De Saint Jacques A La Plancha, Salsify and Pomme
Scallop a la plancha, salsify & apple. It was accompanied with a glass of Louis Jadot Chablis 2014, a white wine from Burgundy famed for their light, dry aromatic wines.
Le poulet Gaston Gérard
Gaston Gérard Chicken is a famous recipe from Burgundy. What started as a kitchen accident is now a gastronomic wonder thanks to the use of Burgundy white wine, crème fraîche and grated comté. It was accompanied with a glass of St Émilion Cheval Noir 2013, a very popular dark wine from Bordeaux.Ganache Au Chocolat, Cremeux A L’Orange and Son Sable A La Fleur De Sel
Sable Fleur de Del, chocolate ganache & Orange cremeux. This savory dessert was accompanied with a glass of Muscat Beaumes-de-Venise 2013, M. Chapoutier, a sweet white wine from Rhone.
The entire soi·rée ended on a high note, and I was very pleased the entire evening. I highly recommend another visit to the Mandarin Grill.
